Summer dessert burger recipes are back!

Last year it was a giant cookie burger cake. The year before that, these mini fruit & cookie burger cookies.

This year, your favorite chocolate and marshmallow filled graham cracker sandwich is getting a little update. That’s right we’re talking a new way to serve a s’mores cookie sandwich.

Just in time for this month’s Recipe Redux, where we’re upgrades sandwiches.

S’mores stuffed cookies

For this years dessert burger fun, we’re making s’mores cookies with homemade graham crackers. 

They’re shaped to resemble the top and bottom of a burger bun, stuffed with chocolate and sandwiched around a roasted marshmallow. Creating a bite sized smores cookie burger.

Stuffed graham cracker chocolate chip cookies

The same graham cracker dough is used for both the top and bottom of these s’mores. Divide the dough in half. Roll it out and cut circles to make the flat bottom layer.

Use the remaining dough to make the top of the cookie “bun.” Gather a tablespoon of dough in the palm of your hand. Create an indent in the center and fill with 3-4 regular sized chocolate chips. Pinch the dough closed around the chip and roll into a ball.

Oven roasted marshmallows

To give these cookies a real s’mores like effect, you’ll need roasted marshmallows. Heating a marshmallow causes its sugars to caramelize, producing a crispy outer layer and a gooey center.

This can easily be done over an open fire—outdoors or even in the kitchen over the stovetop. If it catches fire (it’ll be delicious) but you’ll probably blow it out to extinguish the flame.

Since we’ll be serving these to guests, we want to avoid a blowing out a flaming marshmallow. Place the marshmallows under the broiler of the oven for 1-2 minutes and you’ll have delicious (germ free) toasted marshmallows to serve a crowd.

S'mores Burger Cookies

A burger shaped s'mores cookie sandwich. Made with homemade graham crackers stuffed with chocolate and an oven-roasted marshmallow filled center. It's the perfect BBQ dessert recipe.

Ingredients

  • ½ cup whole wheat flour
  • ¾ cup all-purpose flour
  • 2 Tbsp light brown sugar
  • ¼ tsp fine sea salt
  • 1 tsp cinnamon
  • ¾ tsp baking soda
  • 4 Tbsp butter
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • ¼ cup water
  • ¼ cup chocolate chips 3-4 chips per cookie
  • 1 tsp sesame seeds to garnish
  • 15 marshmallows

Instructions

Chocolate Filled Graham Cracker Cookies

  1. Preheat oven to 350⁰ oven. Line 2 small baking sheets with parchment paper.
  2. In a medium sized bowl, mix together the flours, sugar, salt cinnamon and baking soda. Cut in the butter. Stir in the honey, vanilla and water (will resemble coarse crumbs) and continue to knead with your hands until the dough can form a ball.
  3. Transfer half the dough onto a piece of parchment paper. Cover with another piece of parchment and roll out to ⅛ inch thick. Use a circle cookie cutter to create 15 circles. These are the bottom burger pieces. Transfer to one of the lined baking sheets. Refrigerate to chill while you shape the remaining dough.
  4. Collect any remaining scraps and return them to the bowl. Scoop out 15 one tablespoon sized pieces of cookie dough. Make a small indent in the center of the dough and insert 3-4 chocolate chips. Pull in the edges to seal the chocolate inside. Use your hands to roll the dough into a ball, squeezing/apply pressure as necessary to shape. Flatten into a disc like shape with the palm of your hands. This will be the top of the burger. Repeat with the remaining dough. Transfer to the other sheet pan. Press a few sesame seeds onto the tops of these cookies.
  5. Remove the sheet pan from the refrigerator. Bake both cookies in a 350⁰ oven. After 8 minutes, remove the bottom pieces. Bake the tops for an additional 3 minutes. Remove the parchment paper from the sheet pans as soon as the cookies come out of the oven. Allow to cool slightly, on the parchment paper. 

Oven Roasted Marshmallow

  1. Set oven to broil high. Line a baking sheet with parchment paper.
  2. Add the marshmallow. Be sure to spread them out and arrange them to be standing on one of their flat sides. Try not to crowd the pan, as they will expand. Do this in batches if necessary.
  3. Broil to a light brown color (about 1 minute), flip and continue cooking until it reaches your desired color (approximately 30 seconds). Watch them carefully as they burn quickly. (Note: my oven racks were in the center of the oven.)

Burger Assembly

  1. Place the toasted marshmallows on top of the bottom cookies.
  2. Pierce the center of the top cookie "bun" with a toothpick. Push the cookie up a little. Hold it while adding on top of the marshmallow and (bottom) cookie stack. Press down gently to secure all 3 layers.
