Enjoy your favorite Summer produce all year long with a batch of Sarah Sanneh's Blackberry Bran & Zucchini Muffins.

Ingredients
  • 1 ½ + ⅓ C flour
  • ½ T baking soda
  • ½ t salt
  • ½ C bran
  • 3/4 C butter melted and cooled to room temp
  • 6 T light brown sugar firmly packed
  • C molasses
  • ½ C shredded zucchini
  • C sour cream
  • ¾ C blackberries
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.

  2. Combine the flour, baking soda, salt and bran together in a large bowl.

  3. Mix melted room temp butter with light brown sugar, molasses, zucchini, and sour cream.
  4. Add wet into dry and gently fold in blackberries (try not to burst!)

  5. Fill a parchment paper lined muffin tin with batter (about 2 1/2 Tablespoons per muffin) and bake for 30 minutes.

Recipe Notes

If desired: top each muffin with an additional blackberry before baking.
