What is kombucha?

Kombucha is a fermented drink made from bacteria and yeast mixed with black/green tea and sugar. Like other fermented foods, this bubbly concoction contains probiotics, antioxidants, amino acids, polyphenols and active enzymes. It can be found in the refrigerated section of most supermarkets and convenient stores.

Enjoying the taste of kombucha

If you already like carbonated drinks, kombucha may be right up you alley. It generally has a tart taste and a smell that resembles vinegar. Many brands will add fruit and/or vegetable juice for additional flavor. Here’s where the taste can vary.

If you’re new to tasting kombucha, pick a bottle you know you already like the taste of the juice added (such as lemonade or apple). Leave room to grow into more adventurous flavor combinations (like ginger or cayenne).

Kombucha mocktails 

Another way to enjoy kombucha is by including it in your bar cart. Just in time for summer entertaining, we’re mixing up gut-healthy kombucha mocktails for this this month’s Recipe Redux theme. 

For this flavored kombucha recipe, we’re revamping the Shirley Temple drink from your youth (or adult days). Giving it a healthier twist with just 2 simple ingredients: kombucha and pomegranate juice.

Ingredients

Kombucha

Shirley Temple, a non-alcoholic mixed drink is commonly made with a carbonated soft drink—either a ginger ale or a lemon flavored soda. Here’s where the kombucha fits in. Grab a lemon & ginger flavored bottle and you’re ready to go.

Pomegranate Juice

Another important component of a Shirley Temple drink is grenadine. The bar syrup that adds a tart and sweet flavor, as well as a red color to mixed drinks.

Instead of using this syrup—which is made from cooking down pomegranate juice and sugar—we’ll add 100% real pomegranate. This adds the same look and flavor when paired with the kombucha.

Of course, you could always cook them into a syrup. Like the pomegranate molasses in these Vegan Lachmagine, aka tiny meat pies. (It’s also a good way to use the rest of the bottle of pomegranate juice.)

Garnish

Instead of a maraschino cherry garnish, a few lemon slices are added to each glass. Also, make sure to serve this drink over ice. Plain ice is fine but why not add some colorful cubes like the ones used in this glass of Cold Brew Green Tea

Pomegranate Lemon Kombucha Mocktail

Total Time: 3 minutes

A drink that will bring you back to your childhood. This Pomegranate Lemon Kombucha Mocktail is a gut-healthy update to the classic Shirley Temple drink. 

Ingredients

  • 16 fl oz lemon & ginger flavored kombucha
  • 1 cup 100% pomegranate juice
  • 1 lemon, sliced

Instructions

  1. In a pitcher, stir together kombucha and pomegranate juice.
  2. Serve over ice. Garnish with lemon slices.

Notes

To Make a Single Serving:

Pour kombucha and pomegranate juice into a glass in a 2:1 ratio. Fill with ice. Garnish with lemon slices. Stir and enjoy.
