The sweet, fruity and tart taste of passionfruit frozen into ice pops. If you love this tropical fruit like I do, you’ll want to make room in your freezer for this easy three ingredient passion fruit popsicles recipe.

Passion fruit popsicles

Combined two favorites—tropical passionfruit and flavored herbal tea—to make my latest summer eats. Pretty sure this recipe will be made throughout the year. No matter the temperature outside.

Ingredients

  • Frozen Passion Fruit Pulp – made from 100% passion fruit, minus the crunchy seeds. It’s available in the freezer section of most supermarkets all year round from Goya or La Fe Foods (~$3.50)
  • Herbal tea – I like using the Passion flavor from TAZO.
  • Honey – to sweeten the popsicle mixture (but this hot honey might add a nice spicy kick as well).

Pre-freeze popsicle molds

Place your empty popsicle mold in the freezer. Chill for 1-2 hours before you start preparing the ingredients for this recipe.

Prepare the pulp

Remove the passionfruit bag from the freezer. Break the pulp into smaller pieces while it’s in the bag. Massage until the pulp is a slushy like consistency. You can use your hands (covered with a towel or oven mitt) or a rolling pin to assist.

Cut off a corner of the the bag. Squeeze the pulp into the center of each popsicle cavity. The mixture should snake down the inside of the mold, without filling it entirely. Return to the freezer.

Prepare the tea

Brew tea according to package instructions. Stir in honey. Cool completely.

Quick cooling tips

Have you ever melted chocolate in a double boiler? Use this same technique to quickly cool the passion fruit tea.

Place the brewed tea (still in a cup or transferred to a small bowl) inside a larger container. Fill the larger container with ice and cold water. Make sure the ice water does not go above the tea layer.

Be careful that 1) both containers can handle the quick temperature changes. I like using a metal bowl (Pyrex or even a pots would work too). 2) The smaller bowl doesn’t fall (and spill!) into the larger one.

Fill a small sheet pan with ice. Place a second sheet pan on top. Carefully pour tea into the top pan.

Alternatively, pour tea into a single sheet pan resting over frozen ice packs.

How to remove frozen popsicles from the mold?

Hold the popsicle mold under warm running water for 20-30 seconds. Angle the container so that they water runs over the sides of each pop.

How to keep popsicle sticks straight?

Use a popsicle mold that has a cover with a slot to hold the stick upright. If your mold doesn’t have a cover, create your own with aluminum foil. Place a layer over the top of the container. Cut a small slit in the center for the popsicle stick.

What if the sticks falls down to the bottom?

If the popsicle stick drops too far into the mold, you’ll be left with very little space to comfortably hold your ice pops once frozen. Luckily there are a few ways to prevent this.

Wait before inserting the stick – give the mixture some time to freeze before adding the popsicle stick. Check on these within the first few hours of freezing for the ideal time.

Freeze in layers – Fill each of the popsicle cavities with a small amount of the mixture, about a third of the way full. Freeze until solid. Pour in remaining liquid and insert the popsicle stick. It will be supported from the frozen layer at the bottom.

Use a tool to help – attach a paper clip, mini clothespins or a piece of tape where the popsicle stick meets the top of the mold’s lid. This will help prevent the stick from sliding down. Remove once frozen.

Instructions

  1. Place empty popsicle mold into the freezer 1-2 hours before making this recipe.
  2. Remove bag of passionfruit puree from the freezer. Set aside to defrost 2-5 minutes. Break into smaller pieces and massage into a smooth slushy consistency.
  3. Cut a small hole on a corner of the bag. Squeeze mixture into each cavity of the popsicle molds. Cover and freeze, 15 minutes.
  4. Meanwhile, brew tea in 1½ cups boiling water for 5 minutes. Remove tea bags and stir in honey. Carefully, place over ice water to quickly cool.
  5. Pour tea over passion fruit puree. Use a popsicle stick to gently stir, making sure the mixture completely fills each mold.
  6. Cover and insert popsicle sticks.
  7. Freeze 6-8 hours or overnight, until solidly frozen.
