Build an Edible Chanukah Menorah

Better than simply plating produce on the table, arrange them into this easy to make edible menorah—made out of cucumber, fruit and nuts. Serve is as alongside your hanukkah appetizers or add it to the dessert table.

Edible Chanukah Menorah

Decorate your holiday table with this edible menorah made out of fruits, vegetables & nuts.

Materials

  • 1 large cucumber
  • 8 dates
  • ~½ cup mascarpone cheese
  • 12-15 grapes
  • Assorted fruit & nuts to fill the plate (pistachios, almonds, craisins, pomegranate arils)

Tools

  • knife
  • melon baller
  • piping or plastic bag
  • tooth picks
  • large serving tray

Instructions

Build the Base

  1. Cut off a long slice of cucumber from the side that you want to be the bottom. This will help stabilize the base of the menorah, preventing it from rolling away. Lay the bottom side down on a flat surface.
  2. Position the 8 dates (aka the candles) next to the cucumber to determine their placement.
  3. Use the small side of a melon baller to cut half circles from the cucumber. Check to make sure the dates will fit inside.

Create The Candles

  1. Use a sharp knife to cut the top ¼ off the dates. Cut from the side attached to the pit. Remove the pit. If your dates are too soft to cut, place them in the freezer for 5-10 minutes to firm before cutting.
  2. Fill a piping bag with mascarpone cheese. Cut off a tiny piece from the tip. Fill the dates with cheese.
  3. Place a whole grape on top of each date.

Assemble the Menorah

  1. Use a small amount of the remaining mascarpone cheese to fill each pre-made holes in the cucumber.
  2. Place a date inside each section.
  3. Cut off the ends of the cucumber. Carefully slice through the cucumber in between each date. 
  4. Make the shamash out of one of the cucumber ends, the toothpick, grapes. Make a small incision in the top grape to insert the almond. Place alongside the menorah.
  5. Arrange additional fruit and nuts around the base.
