Bok Choy with Harissa Couscous

Yield: 4 cups

Ingredients

  • 1½ cups (165 grams) chopped bok choy
  • 1 teaspoon sesame oil
  • ¾ cup (117 grams) pearl couscous, whole wheat
  • 1 teaspoon olive oil
  • ¾ cup boiling water
  • 2 tablespoon harissa
  • ½ tablespoon balsamic vinegar
  • 1 teaspoon maple syrup
  • ¼ teaspoon granulated garlic
  • 3 ounces (~6 tablespoons) feta cheese, crumbled
  • 3 tablespoon hemp hearts

Instructions

  1. In a medium saucepan, sauté bok choy in sesame oil over medium heat (4-5 minutes). Transfer to a serving plate and set aside.
  2. Return the saucepan to the stove, over a medium heat. Toast couscous with olive oil, stirring regularly, until pieces turn a golden brown color (2-3 minutes). Pour in boiling water. Lower the heat to medium-low, cover and cook for 5 minutes. Test for doneness. If necessary add a few more tablespoons of water and cook for a couple more minutes.
  3. Stir in harissa, vinegar, maple syrup and garlic. Cook 1-2 minutes, until most of the liquid has evaporated.
  4. Layer the couscous over the bok choy. Sprinkle feta cheese and hemp hearts over the top. Serve warm or chilled.
