What is mochi
Mochi is a Japanese dessert made from sweet & sticky rice flour. Typically formed into individual, round, bite sized portions with a soft & chewy texture.
Available in a variety of different flavors. Due either to the dough itself (which can be colored as well) or stuffed with a sweet filling —such as ice cream, bean paste or fruit.
How to make mochi easy
To make this sticky & stuffed dessert, the mochi dough needs to be steamed until cooked then dusted with a starch to help prevent sticking while assembled. If you’ve ever been near corn starch you’ll know, this part of the recipe gets messy.
Our way around that is to skip the individual portions & shaping. Turning this into more of a mochi board recipe. Where the components are spread out and layered in a single dish instead of wrapped around filling.

Ingredients
- sweet white rice flour – made from sticky rice, this flour is essential for making mochi. Bob’s Red Mill makes a bag of this flour. (Note: this is not the same as rice flour & can not be substituted)
- white granulated sugar – to sweeten & add flavor
- water – to hydrate & form the mochi dough
- chopped fruit – here we used mango, grapes, blueberries, gooseberries, dragon fruit. Select your favorite fruits, what’s in season, or what you already have available in the kitchen. This
How to make this fresh fruit mochi recipe

prep produce
Start by washing and drying your produce. Remove any inedible peels. Dice all the fruit into bite sized pieces & set aside. Extra fruit or leftovers from this fruit salad with cheese (minus the cheese?), could be used here too.

microwave mochi
Next up is making the mochi dough. Mix together the sweet rice flour, sugar and water in a microwave-safe bowl, until smooth. Cover & cook in the microwave for about 1½ minutes, pausing to mix every 30 seconds. (This may vary depending on the power of your microwave)
assemble the mochi bowl
Immediately spread the dough into an even layer on the bottom of your serving dish. Small platters with a lip or wide shallow bowls, like pasta bowls work well here. The dough will be hot and sticky. Use a spoon to work quickly and carefully.
Layer the fresh fruit over the top. Arrange it any way you like.

How to prep & store this fruit and mochi bowl
Mochi is usually best eaten as soon as it’s made, or at least on the same day.
The best way to prepare this dish in advance is to dice the fruit ahead of time. Wait to prepare the mochi portion until you’re ready to serve it.
Leftovers can be refrigerated for up to a day or two (though the texture might change & the fruit might release some of its juices). Wrap in plastic or transfer to an airtight container.
Fresh Fruit Mochi Bowl

Ingredients
- Variety of fresh fruit, enough to have 3 cups chopped fruit (mango, grapes, blueberries, gooseberries, dragon fruit)
- ½ cup (80 grams) sweet white rice flour
- 1 tablespoon (12 grams) sugar
- ¾ cup (180 mL) water
Instructions
- Prepare the Produce: wash, dry, peel (if needed) and cut fruit into small bite sized pieces.
- In a microwave safe bowl, mix together rice flour, sugar and water. Cover with a paper towel and microwave for 1½ minutes*, pausing to stir every 30 seconds.
- Once the rice is cooked, immediately spread it onto the bottom of a serving dish (platters with a lip or wide shallow bowls work well here). Layer fresh fruit over top.
