Ingredients

  • 3 tiny avocados
  • ¼ cup lemon juice
  • 1 cup diced watermelon
  • ¼ cup minced red onion
  • 1 tablespoon chopped parsley
  • salt, pepper, red pepper flakes, to taste

Instructions

  1. Cut the avocado in half and remove the pit. Scoop the flesh out into a bowl. Squeeze in lemon juice and mash with a fork.
  2. Mix in the remaining ingredients, seasoning to taste.
  3. If desired, refrigerate to chill before serving.
