Have you ever tried making crepes yourself? For a while, I was hesitant to try it. Thinking they required too much time and effort to make. But, not any more.

What are Crepes?

Crepes are a type of pancake. But, not like the typical kind that are served in a tall stack at breakfast. Instead, these are made very thin without a fluffy interior.

The batter is kept pretty simple too—without added flavors or mix-ins, like fruit or chocolate chips.

How to Make Crepes at Home

The Ingredients

In order to make these almond flour crepes, here is what you’ll need:

From the refrigerator: eggs, milk, yogurt

From the freezer: almond flour*

From the pantry: oil, sugar, salt, baking powder and cinnamon

*It’s best to store nuts and nut flours in a cool and dark place, like the refrigerator or freezer. This helps prevent the nut flour from going bad and extend their shelf life.

The process of making this gluten free crepe recipe is easy. All you need to prepare the batter is a large bowl and a good whisk. There is no need to get your blended dirty since the batter ingredients whisk together easily by hand.

Time to Cook Crepes

Here’s where it gets a little complicated. Compared to other kinds of “pancakes” these are going to need a little more attention.

Crepes are not as simple as filling a muffin tin and baking them in the oven like Mini German Pancakes. Though the cooking process is more similar to traditional pancakes—where you cook one side at a time, flipping in between—it’s hard to cook multiple crepes at once. They can’t be made on a griddle without special tools to help them spread.

To make a single crepe, pour the batter into a frying pan. Swirl around to spread evenly. Cook on one side, flip and continue cooking the other side. This process takes about 5 minutes per crepe. 

Best to set a timer and have a quick kitchen task to do while these cook. Better yet, take out more than one non-stick pan. That way you can cook more than one crepe at a time.

Almond Flour Crepes

Yield: 9 crepes
Prep Time: 7 minutes
Cook Time: 30 minutes
Total Time: 37 minutes

Enjoy these almond crepes with yogurt on their own or wrap them around your favorite sweet or savory mixture.

Ingredients

  • 4 eggs
  • ½ cup whole milk yogurt
  • ½ cup milk (whole)
  • 1 tablespoon oil
  • 1 cup almond flour
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • cooking spray
  • your choice of filling ingredients, optional

Instructions

  1. In a small mixing bowl, whisk together the eggs, yogurt, milk and oil.
  2. Gradually add in the almond meal followed by the sugar, baking powder and seasoning. Continue whisking until everything is well combined and the batter is smooth.
  3. Heat a non-stick frying pan over medium heat. Spray with cooking oil.
  4. Lift the heated pan off the burner and pour ⅓ cup of batter into the center. Swirl in a circular motion to spread the batter evenly. (Try not to go all the way to the sides of the pan.)
  5. Immediately return the pan to the burner. Cook for 3 minutes. Run a rubber spatula around the edges of the crepe. Carefully, peel the crepe off the pan (with your hands) and flip. Cook for an additional minute. Remove to a flat surface.
  6. Repeat with the remaining batter until all the crepes are cooked. 

Notes

Serve these gluten free crepes plain or along with your choice filling. To do so, spread filling over half of the crepe and fold in quarters.
