A shortcut to thin crust cheese pizza

Pizza night can start from scratch. By making your own homemade dough: regular, a quinoa pizza crust (gluten free) or with a sweet potato pizza crust.

Or take it easy and use a store bought pizza dough.

Or make it even easier, with a flatbread option. Since the bread is already baked, all that’s left to do is assemble the pizza & cook long enough to melt the cheese.

  • tomato paste – get the canned version for this. Each piece of pita uses enough that you’ll finish off a tube of tomato paste too quickly. Or substitute with your favorite tomato sauce instead.

  • mozzarella cheese – shredded or try it with these marinated mozzarella balls

Here’s where you customize your pie. Add your favorite pizza toppings. Finish by sprinkle on the shredded cheese.

  • artichoke hearts – canned or jarred
  • asparagus – use a peeler to cut into long thin strips or cut into bite sized pieces. Leftover could also be used here. (Make sure the pieces aren’t overcooked. You don’t want them to be mushy.)
  • broccoli – florets (can be pre-cooked or raw) or riced pieces
  • carrots – shredded
  • corn kernels – sprinkle some on straight from the freezer, drain a can of corn or cut kernels off leftover cooked cobs
  • grilled eggplant
  • herbs – replace the tomato sauce/paste with pesto sauce or wait until after the pizza cooks to drizzle on a spicy chimichurri sauce
  • massaged kale – mixed with oil & spices
  • meat-free mixture – like this stirfry made with the trader joe’s beefless ground beef
  • sliced mushrooms – sautéed or raw; they can also be processed into a paste like in the spread for this vegan lachmagine recipe
  • pitted olives – sliced
  • colorful bell or chili peppers – chopped or thinly sliced; fresh/jarred/pickled
  • pineapple tidbits – frozen or canned (drained)
  • chopped or sliced red onion
  • roasted potato (white or sweet) or butternut squash cubes
  • sun dried tomatoes – drain, if they come packed in oil
  • roasted tomatoes & garlic – leftovers from this confit with tempeh recipe are great for this!
