Are you still on summer vacation or is it already time to transition back to school mode? We still have a few more week here in NYC so here’s one last recipe (well, really there are 3) —gold, silver and bronze colored popsicles. These Medal Ice Pops are the perfect snack to celebrate the end of this summer’s Olympics games in Rio. Will you be watching the closing ceremony this weekend? Don’t put your popsicle trays away yet, use your Jewel Pop Molds from KOJI to make this fun snack. Each ice pop holds about 1½ tablespoons, making them small enough to enjoy more than one at a time. Perfect for trying more than one flavor. The silicon molds help easily release these pops and simplifies cleanup since they can be inverted and washed with a sponge.  I like having these on hand to turn morning leftovers—like coffee, smoothies or yogurt—into a fun frozen treat.

Gold Medal Ice Pops

  • ¼ teaspoon ground turmeric powder*
  • ⅛ teaspoon ground ginger
  • pinch pepper
  • 1 teaspoon maple syrup
  • 3 tablespoons milk, divided

//Directions//Combine the spices, maple syrup and 2 tablespoons milk in a small mug. Mix well. Microwave 15-20 seconds until heated through. Add in the remaining milk and allow to cool before pouring into popsicle mold. Freeze until solid. (makes 2)

Silver Medal Ice Pops

  • 2 tablespoons whole milk Greek yogurt
  • 1 tablespoons milk
  • ¼ teaspoon maple syrup
  • 1 heaping tablespoon frozen wild blueberries

//Directions//In a small bowl, combine the milk, yogurt and maple syrup. Add in the blueberries, stir gently to create a swirl or marbling effect.  Use a spoon to transfer the mixture into the popsicle molds. Freeze until solid. (makes 2)

Olympic Medal Ice Pops (Bronze)

Bronze Medal Ice Pops

  • 2 tablespoons whole milk Greek yogurt
  • 1 tablespoon+ 1 teaspoon pomegranate/cranberry juice

//Directions//In a small bowl, stir together all of the ingredients. Pour into popsicle mold and freeze until solid. (makes 2)

Note

*Turmeric powder will stain the white mold, but it’s merely cosmetic as this should not affect the taste of future ice pops.

**Each recipe should make 2  ice pops per color. Add a few extra drops of liquid (milk/juice) should your pop not reach the fill line.
