German Pancakes

Dutch baby pancakes—also known as German pancakes—are a popover style pancake usually baked in a large skillet. While baking the edges puff up while the center remains flat, like a thick crepe.

Instead of cooking these on top of the stove, they get baked in the oven. To make these mini, the batter is divided among a muffin tin.

These individual, mini German pancakes will puff up and turn golden while baking just like the larger version. Once out of the oven, they tend to deflate. That’s normal too.

You can make this German pancakes recipe plain or increase the vitamin C and fiber by adding blueberries. The blueberries will cause the batter to deflate more, creating hollow cavities in each pancake. Giving each pancake their own unique look.

Make Breakfast before Bed

The batter to make these mini German pancakes can be prepared up to 24 hours in advance. Store premade batter covered in the refrigerator.

Customize your choice mixins based on what ingredients you have available. Both fresh or frozen blueberries can be used to make this mini German pancake recipe

Mini German Pancakes (Dutch Boy Pancakes)

Yield: 22 mini pancakes

Ingredients

  • 3 tablespoons all-purpose flour
  • 3 tablespoons white whole wheat flour
  • 3 tablespoons 2% fat Greek yogurt
  • 3 tablespoons milk (2%)
  • 2 eggs
  • 1 tablespoons maple syrup
  • ½ teaspoon vanilla bean paste
  • ÂĽ teaspoon cinnamon
  • â…› teaspoon fine sea salt
  • ½ cup blueberries (optional)

Instructions

Preheat oven to 425ºF. Spray a mini muffin tin with cooking spray.

In a small mixing bowl, whisk together all of the ingredients except the blueberries. Continue to whisk until all the ingredients are combined into a smooth and shiny batter. Some bubbles should also appear.

Fill the mini muffin tins up halfway with 1 tablespoon of the batter. If using, drop 3-4 blueberries into the center of each compartment.

Bake for 12-14 minutes, until the pancakes have puffed and the edges have developed some color.

      Thank you. You’re right, these would make a great portable option too. Might even be able to take them straight out of the freezer, just have them thaw out for a bit first.

    We are huge dutch baby fans, so I am absolutely giving these a go. I might try and freeze a couple to see how they work. It would be very handy to have some in the freezer.
