You’ve seen small bite sized recipes here before, but this month’s Recipe Redux theme is even sweeter. We’re sharing small bites of dessert to celebrate their 6th birthday. How fun is that!?!

Serving bite sized desserts means you can sample more than one treat on your plate. Keep a batch of these Almond Ice Cream Bites in the freezer for a convenient single serving of dessert. Perfect for when you need a small, portion controlled sweet fix.

Inspired by a childhood ice cream truck favorite, these ice cream bites layer a small scoop of ice cream over a ground almond mixture. Making the perfect single serving frozen treat—that will melt in your mouth—perfect for a hot summer day.

To help hold their bite sized shape, these were frozen in a peanut butter cup chocolate mold. A silicon mold or a mini muffin tin could be used as well.

Almond Coated Ice Cream Bites

Yield: 10 pieces
Prep Time: 10 minutes
Additional Time: 1 hour 10 minutes
Total Time: 1 hour 20 minutes

Skip the cups and cones this Summer and cool off with this bite size almond coated ice cream recipe.

Ingredients

  • ¼ cup almond meal
  • 2 teaspoons coconut oil
  • ⅛ teaspoon cinnamon
  • ½ teaspoon maple syrup
  • ~½ cup vanilla ice cream, softened

Instructions

  1. Place almond meal in a small bowl. Mix in oil, cinnamon and maple syrup. Press one teaspoon of the mixture into each cavity of the candy mold. Freeze 5-10 minutes until set.
  2. Remove mold from the freezer. Spoon 2 teaspoons of ice cream into each almond filled cavity. Flatten with the back of the spoon. Refreeze until set.

Notes

Make your own almond meal

Pulse almonds (whole, sliced or slivered) in a food processor or blender until crumbs form. Be careful not to overmix or you'll end up making almond butter. ½ cup almonds makes approximately ¼ + 2 tablespoons almond meal.
